AI
A sourdough starter is flour and water where wild yeasts and lactic acid bacteria live. It takes one or two weeks to start, gets fed regularly and, well kept, lasts for years. It raises bread without store-bought yeast and gives it its tang.
How it works
A culture you feed
Every time you feed it, the starter rises, peaks and falls. Learning to read that peak is the whole secret: the app reminds you when to feed it and helps you read how it is doing.
The rules
- Flour and water, nothing else: time and temperature do the rest.
- A clean jar every few days.
- If you see colored fuzz, throw it out.
