How it works

Dry salting

For sauerkraut, kimchi and anything shredded or finely cut: salt is worked out on the weight of the cut vegetables and mixed straight in.

In brine

For whole or chunked pieces such as pickles or carrots: salt is dissolved in the water and worked out on the water alone.

Weigh your salt: each salt takes up a different volume, and a spoonful of one doesn’t weigh the same as a spoonful of another.
